I am such a sucker for brunch. For those of you who are totally out of the loop, brunch = breakfast+lunch aka a late breakfast/early lunch. I feel like the sky is the limit with brunch, since you mix breakfast and lunch foods. And if you’re anything like me, brunch always includes some form of bubbly. I love me some champagne in mimosa form (;
This past Sunday I had the chance to sleep in until 9 (praise the Laaaawd) and didn’t get moving until like 10. Adam was fishing so I decided to throw together my own brunch at the house so I wouldn’t have to get presentable to go out somewhere…oops, bum status.
I was pleasantly surprised with the little concoction that I made and plan on recreating it again when he’s home. I figured y’all might like to try it, too. It’s been a hot minute since I’ve shared a recipe (probably cause I don’t cook, ha) so here it is:

It’s basically a big bowl of a bunch of random goodness. You’ll see.
What You’ll Need:
- 2 eggs
- 1/4 cup quinoa (cooked)
- 1/2 cup broccoli slaw
- 1/4 cup chopped yellow onion
- 1/4 cup chopped tomatoes
- Mrs. Dash Fiesta Lime seasoning
- 1 tablespoon of olive oil
You’re going to start by drizzling the olive oil in a pan on medium heat. Cook the onions and tomatoes first. Then add the quinoa (which is already cooked) and broccoli slaw. Next add the eggs. Sprinkle Mrs. Dash (okay don’t sprinkle…pour) on dish. Let cook for 7-10ish minutes on medium heat, stirring frequently. If you don’t stir, the eggs will stick to the pan and it sucks to clean up, I promise.
Put it all in a bowl and enjoy with some sparkling red raspberry moscato and fresh fruit on the side. SO DELICIOUS.
