Breakfast Muffins & Coffee Smoothie

Breakfast is my FAVORITE meal of the day. Plus, it’s a super important meal, too. It can help set the tone for the rest of your day! My husband doesn’t have a lot of time in the morning to sit down and enjoy a luxurious breakfast (I wake up an hour early every day just so I can enjoy a big breakfast…told you I’m breakfast obsessed) so I had to think of something that would work for his wake up and go schedule.

Enter: Breakfast Muffins!

Breakfast Muffins

These are super easy to make (coming from me, that’s a big deal) and they hold well, too. I made 15 on Sunday night and we ate them until Friday morning. And they are husband approved!

What You’ll Need:

  • Muffin tins (to make 15 egg muffins)
  • Non-stick spray (I used coconut oil spray from Fresh Market)
  • 12 eggs
  • 2 cups of spinach
  • Ground turkey or bacon (I did about 3/4 cup of ground turkey for my first batch and for the second batch did a half slice of bacon wrapped around each muffin…both were delicious!)
  • Mushrooms
  • Onions
  • Tomatoes
  • Jalapeños
  • 3/4 cup cheddar cheese (I used 2%)
  • Splash of almond milk
  • Any spices you want to use (I used cayenne pepper)

What You’ll Do:

  1. Preheat oven to 350* and spray your muffin tin(s) with the non-stick spray.
  2. Cook whatever meat you plan on using in your muffins and then set it aside to cool.
  3. Combine eggs, tomatoes, jalapeños, cheese, splash of almond milk and any spices in a large bowl.
  4. Cook the spinach, mushrooms, and onions and let cool for 3-5 minutes.
  5. Add the cooked veggies and meat to the egg mixture. When I used ground turkey, I just mixed it into the batter. When I did bacon, I sliced each piece of bacon longways, and wrapped half of a piece around each muffin tin slot before pouring the batter in.
  6. Scoop the batter into the muffin tins (I filled them about 3/4 full).
  7. Put in the oven for 15-17 minutes.

I checked the muffins at 15 minutes by sticking a toothpick into one of the muffins.
After they were done, I let them cool for 20 minutes and then put them in the fridge, covered. Like I said, we ate them all week and didn’t have a problem with them being soggy or anything. We grabbed our muffins in the morning, put them in the microwave for a minute and 30 seconds and breakfast was served!

See, easy! And I’ve also been drinking a delicious coffee smoothie that one of my friends gave me the recipe for so I figured I should share that with y’all, too!

Breakfast Muffins and Coffee Smoothie

What You’ll Need:

  • Cup of strong coffee
  • Ice
  • 1/4 teaspoon vanilla
  • Splash of unsweetened vanilla almond milk
  • 2 tablespoons of PB2 (or you can use nut butter)
  • 1/2 frozen banana
  • 1 scoop of protein powder (vanilla and chocolate are both good)
  • Blender

What You’ll Do:

  1. Blend everything together in a blender.
  2. Enjoy!

    Mmmm, these look so delicious! I think I’m going to try out the coffee smoothie when my work starts up again next week. I’m totally make the egg muffins again, too.

    I’ve made these several times and just can’t get into them! I’m not a huge egg lover, but eat scrambled eggs on occasion with no problem! Prefer the runny yolk but ya know.. I tried it again last week in a large 8×8 dish and just did it that way instead of muffin and cut it up into squares kind of like brownies.. And it was ok.. Put spinach, jalapeños, Rotel, mushrooms, and sausage. I don’t know if it’s the texture or what.. But I don’t love them. Maybe it’s eggs! Such a sad thing though cause I want to like them so bad!!! Maybe I can chop it up and put in whole wheat tortilla and try it that way?

    I’m in the same boat as you – but I eat eggs for breakfast almost every morning and I STILL can’t seem to like this type of egg muffin thing! I literally scramble 2 eggs, nuke them in the microwave for a bit, throw it on a tortilla and am out the door. These are practically the same thing so I have no idea why I can’t love them either!
